If you want to hide or add menu items in wp-admin, this excellent plugin might be just what you are looking for:
Adminimize is also a good plugin for modifying the items available in the WordPress Dashboard.
This is also great at hiding items per user: Hide Admin Panels
Another one I like is Pop Menus for WP-Admin. It saves time for scrolling to top of the page for accessing sidebar options as they remain on same place even while scrolling down. Also, it overrides the default drop down that contains the sidebar menu options and replaces with pop-up.
Other related plugins
The way I usually set things up on client sites is as follows:
Adminimize to remove unwanted meta boxes and other general stuff.
Admin Menu Editor to hide menu items, create others etc.
Hide Admin Panels to hide menu items per user or role (quite tedious if there is more than one client user).
An alternative to Hide Admin Panels is Members, which I’m starting to use more and more in recent projects, as it sets proper permissions instead of just hiding via CSS like Hide Admin Panels.
